Grilled Radicchio

Method:

1 head radicchio, quartered

3 cloves garlic, peeled and finely chopped

1/4 c. balsamic vinegar

1/3 c. extra virgin olive oil

coarse salt

freshly ground black pepper

flaky sea salt

Place the quartered radicchio in a sealable plastic container. Whisk together the garlic, vinegar and olive oil. Add a three-finger pinch of coarse salt and a few cracks of freshly ground black pepper. Pour the marinade over the radicchio and set aside for at least 30 minutes, turning once or twice.

Preheat an outdoor grill over medium-high heat. Pull the radicchio quarters from the marinade, gently shaking away any excess, and place on the grill. Reserve the leftover marinade. Grill the radicchio about 8 minutes, turning occasionally, until nicely charred. Season with a bit of flaky sea salt and dress with the reserved marinade.
